Someone wanted me to make carrot cake so I searched online & found a recipe here.
Bought most of the stuff I need the other day on my trip to the bazaar ![]()
Was trifle apprehensive as I was doing everything all alone - especially since I hadn’t learned this at a class or anything (remember my level is still below zero) but decided it would be a great learning experience for me to try something new all by myself right out of a recipe.
Started off by cleaning carrots & then grating them (see uncleaned carrots on left.)

As per the recipe had to add brown sugar & keep for 60 mins, but I didn’t have brown sugar (nor any honey to make any) so just used regular sugar. As it turned out this was a good thing, because the cake is waaaay too rich for words.

While this was going on I crushed and drained some pineapples. Now I could have just bought a can of pineapples from a store, but decided I could have bought a ready made mix as well. If I was doing things from stratch, might as well try do everything from stratch. Besides it was fun using the little crushing stone thingie!!

Crushing & Draining took me a while & the carrot/sugar mix was almost ready, so started beating the eggs.

and ground the cinnamon

Added raisins to the carrot mix (yes, I did stir well after taking this pic!!)

In the meanwhile, added more sugar, oil, vanilla, pineapple, flour, baking soda, salt & cinnamon to the eggs until I got this batter:

Finally added the carrot mix:

and the nuts to end:

And when I got it out about 50 mins later, after cooling & after digging in a bit ![]()

Here’s a PS on that: Technically was supposed to frost with cream cheese frosting between layers & also on the top, but didn’t have any frosting recipe (or is this something one gets off the shelf? Hmm). So ended up with 2 cakes instead of one ![]()

How much time did you spend in grating the carrots? Man! this recipe is a good workout in itself. Considering the calories spent in making this cake, I think it deserves to be rich in calories

there shud b a law against showing us tasty morsels on the screen and then getting away without allowing us to taste any.

One uncle liked the cake so much he wants me to make for Christmas to which friend says “it was good, but not that good”
